Aberdeen vegan food outlet Roots Catering have announced it will be closing down its popular food truck at the beach.

The team at Roots @ the Beach announced on social media they have made the difficult decision to bring their time at the seaside to an end after five years.

Reflecting on the venture, owner Nick Coetzer said that despite it being the 'best thing I have ever done', the high demand had taken its toll.

It won't however be the end of the food truck entirely, as he went on to reveal it will continue operating as a pop-up with different formats in the near future.

Roots specialises in serving plant based favourites from burgers and loaded fries to cauliflower wings and milkshakes.

In a post on Facebook, Nick wrote: "All good things come to an end. This is a tough post to write, but in my heart I know it's the right thing to do. Roots @ the beach will be closing at the end of this week.

"Five years ago I set out with only one ambition, to put out the best possible plant based food out of this tiny food truck. I feel proud at what myself and the teams over the years have achieved and at peace with all the ups and downs of the journey. It has by far been the best thing I have ever done!

"The truth is it takes a lot to maintain standards and consistency, day in and day out, month after month, year after year. This level of menu requires a lot of behind the scenes preparation and logistics. I have to admit I can no longer keep up the demand it takes.

"It might seem crazy to shut down a perfectly viable business. But there is something that feels right about drawing a line under it while it's still at it's best and I have enjoyed continuing to push things forward this year.

"Roots has given me everything I have today and I will be forever grateful to every single person who has come past. Some have become good friends and I owe everything to you all."

He continued: "This however, is not the end of the beach foodtruck. I'll be operating it purely as a pop up with a different format, with many ideas and concepts I have rattling in my head. I'm excited! The drive to be free to create feels intoxicating!

"We will be open this week Friday/Saturday 11am to 6pm & Sunday 11am to 4pm. If there's queues at the end we'll keep going until everyone is served. I'm planning one last pop up the following week Friday 27th, more details on that to come. BIG LOVE, ROOTS."

Fans flocked to the post reacting to the news, with one writing: "Gutted, but you have to do what’s right for you. Absolutely the best food van around and I’ll be down for one last fix."

Another said: "Oh my goodness, I am so sad to read this. Most of my happy memories at the beach include a Roots treat," while a third wrote: "Ahhh man - gutted - but if your new adventure generates even half the enthusiasm the little green truck did - you'll be on to a winner. Thanks for all the calories fella!!!"

"Good luck my brother...you and Roots have definitely made our beach a much better place! Thank you for everything!" posted a fourth and a fifth said: "Fantastic achievement be very proud."
