AI flavour wizardry raises the steaks for veggie burgers

One of the world’s leading flavour manufacturers, Swiss group Firmenich, is capitalising on a booming market for meat substitutes by using artificial intelligence to recreate the flavour of meat in pea, soy or black beans. The algorithms filter down the combination of ingredients from which the experts can create flavours, which are then road-tested in the kitchen with a chef.
