Barbecue pan brownies
Ingredients
200g dark chocolate, chopped
170g unsalted butter
200g golden caster sugar
120g plain flour
3 medium eggs
150g raspberries
1 tbsp icing sugar
Ice cream to serve (optional)
Equipment
Barbecue with a lid
Cast iron pan or skillet
Method
Firstly, put the chocolate in a large heatproof bowl and melt over a pan of barely simmering water. Make sure it doesn’t touch the water as the chocolate can seize and turn grainy.
In a separate pan, stir the butter and sugar over a medium heat until melted and combined. Remove from the heat and scrape into a large bowl.
Take the bowl of melted chocolate off the heat and set aside to cool for a few minutes. Do the same with the butter-sugar mixture.
Once cooled, stir the flour into the butter mixture, followed by the eggs and a pinch of salt. Then add in the melted dark chocolate
When you’re ready to cook, place the raspberries and icing sugar in the cast iron pan and sit it on the barbecue’s grill. Cook these for a few minutes, stirring occasionally, until the berries have broken down a little.
Pour the brownie mixture over the raspberries, closing the lid of the barbecue. Cook the brownies for 25 to 30 minutes..
Once cooked, remove from the barbecue and leave to cool for ten minutes. Once ready, serve with any ice cream of your choice - or just tuck straight.
