Chef who cooked for Queen takes top job at five-star NI spa resort

A chef who once worked for Queen Elizabeth is now bringing his culinary expertise home to Northern Ireland, as Stephen Holland steps into the role of Executive Chef at the newly opened five-star hotel Dunluce Lodge in Portrush.

Having had an impressive career that has taken him into some of the top kitchens throughout America, Canada, China and New Zealand, this 39-year-old Tyrone native describes being given the opportunity to showcase the best Northern Irish produce to a global audience at Dunluce Lodge as a “unique and exciting opportunity”.

Stephen started his culinary journey with celebrity chef Rick Stein and has worked in prestigious venues across the globe, but his roots are still dear to him.

“I have cooked for the late Queen Elizabeth II and in amazing venues in New York and New Zealand,” said Stephen, “but I am very proud of my Irish roots and know our fantastic local produce is on par with the world’s best… I cannot wait to have our first guests dining in our restaurant.”

“The Causeway Coast is a beautiful part of the world and being able to showcase the best of Northern Ireland’s larder at the only five-star hotel in the area is one I couldn’t let pass me by.” He adds.

Stephen’s appointment heralds a new chapter for Dunluce Lodge, the first five-star hotel on Northern Ireland’s Causeway Coast. The property, operated by Valor Hospitality Partners in partnership with US-based Links Collection, is committed to delivery world-class hospitality experiences.

General Manager Stephen Meldrum welcomed the arrival of Stephen to the team, “I am incredibly excited to have Stephen enhance our world-class team at Dunluce Lodge… His CV is impeccable, and his one of the best young Irish chefs around. His intimate knowledge of local produce makes him a great addition to the team."

He also added that Dunluce Lodge, “will benefit from his passion and enthusiasm which will help ensure we, as a team, can deliver best-in-class service and professionalism.”

Dunluce Lodge also promises fine dining, an intimate spa, and bespoke features such as an on-site putting green designed by renowned golf architect Martin Ebert. Complimentary private transfers are also provided to nearly Royal Portrush and Portstewart Golf Clubs.
