Edinburgh 'institution' reopens as cocktail bar as new owner promises 'great local'

A popular Edinburgh drinking spot has reopened under new ownership, as they hope to keep up the 'traditional local'.

The Bonnington, on Bonnington Road, has re-launched as a cocktail bar after the pub closed back in March. New owner Carlo Carrozzi promises 'Peruvian flair' as the well-known institution.

He is also behind the award-winning street food spot The Peruvian, which is located within Edinburgh Street Food. The focus at The Bonnington is said to be on dishes rooted in traditional Scottish cuisine, designed for sharing and 'bringing people together'.

Carrozzi will bring his expertise in hospitality to the new venture, with a background at several Edinburgh spots including The Voodoo Rooms and Dragonfly.

Carlo commented on the new opening: “I have always had ambition to open a cocktail bar and when this location came up, I couldn’t turn it down.

"It is the perfect space, so versatile and it is a well-known institution in Edinburgh, which I plan to continue its tradition as a great local.

"I’m looking forward to bringing some of my Peruvian flair to The Bonnington and I can’t wait to welcome everyone as we re-open the doors.”

The food menu will feature small and large plates, with dishes including crispy monkfish cheeks, coronation fried cauliflower, and roast Hokkaido squash. As for cocktails, you can expect classic drinks as well as Peruvian style mulled wine and Inca Cola.

The Bonnington will be open seven days a week, from midday until midnight - and until 1am on Fridays and Saturdays.
