At an opening party for Kerridge’s Bar & Grill at the Corinthia Hotel, Claude’s mushroom “risotto” with Daniel’s crispy egg. That will be Claude Bosi and Daniel Clifford, two of Tom Kerridge’s good mates.

What unbridled joy to find a swirl of Duchess potato served with butter-poached Goosnargh chicken at Winchester’s Chesil Rectory, once owned by Henry Vlll.

My love for corn on the cob never fades. At The Pig hotel in the New Forest much of the menu is grown or foraged. I start with charred sweetcorn with garden rocket, pickled onions and spiced yoghurt.

At the Hartnett Holder & Co restaurant in the incredibly salubrious Lime Wood hotel in Lyndhurst, garganelli with grouse salsiccia ragout.
