The Great British Bake Off 2023 finalists have said goodbye in heartwarming letters following the airing of the last episode.

Matty Edgell, a teacher from Cambridgeshire, was crowned the Star Baker of the 14th series on Tuesday night (November 28) on Channel 4, winning out over Dan Hunter and Josh Smalley in a closely-contested grand final.

The trio were put through their paces one final time in the Bake Off tent, as they had to ace a choux pastry-themed Signature, a sticky Technical and the creation of a celebration cake in the Showstopper.

Following the announcement of Matty winning the series, he reflected on his time on Bake Off with a heartfelt note posted on the show's social media accounts.

"It is difficult to put into words how grateful I am to have been part of this experience," he wrote. "Spending the summer baking in a tent is something I will never forget and it's taught me so much about myself."

Runners-up Dan and Josh also had one last opportunity to pay tribute to their co-stars and thank Bake Off's production team in their own goodbye notes after the finale.

Josh shared: "Bake Off has been the best experience ever! I've made 11 new friends for life - who also happen to be incredible bakers. I've had hugs and giggles with Noel and Alison.

"And I've had my bakes judged by baking royalty in Paul and Prue. Can life get any better?"

Dan reflected on the final, writing: "To bake for one final time with Matty and Josh will stay with me forever."

Goodbye notes like these have been released throughout the series, giving eliminated bakers a chance to look back on what they learned while competing on the Channel 4 show.

Last week's fourth-place finisher Tasha admitted that walking into the Bake Off tent was the "scariest thing" she'd ever done — whereas the first eliminated baker of the year, Amos, wrote that he'd had an "amazing" time even if he wasn't around for long.

The Great British Bake Off and its spin-off Bake Off: An Extra Slice both air on Channel 4 in the UK. In the US, it's known as The Great British Baking Show, and streams on Netflix.
