I first ate this variation on the classic club sandwich on a golfing weekend in Tenerife back in 2008. We ordered lunch in the clubhouse and these turned up, with all the traditional elements but served in a fun way. I’ve put them on my menu at Soho’s Groucho – called the Groucho Club – and they’ve been a big hit with the members.

Ingredients

  • 4 free-range eggs

  • a little vegetable or corn oil, for frying

  • 8 x 1cm-thick slices of white bread

  • 2-3 tbsp good-quality mayonnaise

  • 2 little gems or 1 small cos lettuce, finely shredded

  • 4 large cooked chicken thighs or 2 breasts, thinly sliced

  • 12 rashers of streaky bacon, grilled

Method

1. Gently fry the four eggs in an oiled pan, seasoning them as they are cooking.

2. Meanwhile, cut a hole in the centre of four of the slices of bread, slightly larger than egg yolks. Lightly toast all the slices on both sides.

3. Mix the mayonnaise with the shredded lettuce and chicken slices, and season. Divide the mixture between the four intact toast slices then arrange the bacon rashers on top.

4. Top with a fried egg and a piece of toast with a hole so the yolk shows through. Eat immediately.
