Healthy chocolate cake uses no sugar and has one genius ingredient for icing

We all need a sweet treat every now and again to satiate our cravings, but that doesn’t mean it has to be unhealthy. A home cook has found a way to include sweetness into her everyday desserts to help with her type 1 diabetes.

Type 1 diabetes is an autoimmune condition where a person’s body cannot make insulin, which helps the body use glucose (sugar) for energy. Megan, from Colorado, USA, regularly shares recipes which she makes at home via her website, Beyond The Syringe.

She’s even found the perfect way to concoct a slap up chocolate cake at home without using processed sugar and gluten. Describing it as the “LBD of desserts” - that’s ‘little black dress', for anyone not in the know - Megan has created a cake which can be “kind of” good for you.

Megan also happens to use a surprising ingredient to create thick, chocolatey icing: an avocado. Yes, avocado can be used in desserts.

Avocado adds natural sweetness, but also helps thicken up the icing. Megan also recommended dolling up the cake with some added berries for decoration.

The recipe makes nine pieces of cake. She’s also come armed with all the nutrition information. Per serving with frosting: 246 kcal, 33g carbohydrate, 5g fibre, 8g protein, 12g fat. If you leave off the frosting: 207 kcal, 25g carbohydrate, 3g fibre, 7g protein, 10g fat.

So if you want to try your hand at some healthy baking, this is what you’ll need.

Black bean chocolate cake with avocado icing

Ingredients

For the cake:

  • 1 can of black beans, drained and rinsed

  • 5 eggs

  • 170g honey and 1/4 tsp baking soda

  • 1 tbsp vanilla

  • 6 tbsp unsweetened cocoa powder

  • 1 tsp baking powder

  • 1/2 tsp baking soda

  • 6 tbsp butter, room temperature

For the icing:

  • 1 ripe avocado

  • 170g maple syrup

  • 43g unsweetened cocoa powder

Method

Preheat the oven to 160℃/140℃ fan. Prepare a 9x9” square tin or equivalent sized round in by greasing and lining with baking paper.

Add the black beans, eggs, honey, vanilla, and 1/4 teaspoon of baking soda to the blender. Blend the ingredients together thoroughly.

Add the cocoa powder, baking powder and baking soda to the mixture and blend well again. Finally, add the butter and blend until all incorporated.

Pour batter into the pan, before baking in the oven for 30 to 40 minutes until the centre is just set. Set aside and allow to cool completely while you prepare the icing.

Cut avocado in half and remove its stone. Scoop the flesh into a blender or stand mixer, along with syrup and cocoa powder.

Blend thoroughly, scraping down the sides occasionally. Once the green has completely disappeared, the icing is done. It should look like thick chocolate frosting.

Frost the cake once cooled. Serve and enjoy!
