Make healthy smash burgers with nutritionist’s easy recipe featuring 30g of protein

A nutritionist has shared an easy, at home recipe recreating an indulgent food classic which she claimed is better than anything you'll stand in a queue for.

The UK couldn’t get enough of smash burgers last year, and their popularity is set to continue to grow, with the rise in restaurants such as Honest Burger popping them on menus and with the viral Supernova and Chilo's in Edinburgh getting in on the action.

However, if you don’t have time to be queuing outside in the cold, a nutritionist has shared a healthy version of the viral food which you can make at home. As part of her 'Don’t queue, make it yourself’ series, nutritionist and influencer Sophie Gastman, also known as @sophiethenutritionist, shared a perfect plant-based version to create at home.

Showing burgers can be part of a balanced diet, her delicious recipe is made with Beyond Smash patties from Beyond Meat, contains a massive 30 grams of protein in each burger. Each patty contains 12 grams of protein. Made to look and taste like animal meat, the Beyond Smash can be charred in the pan to create a crispy caramelised patty, that gives maximum meaty flavour.

Sophie captioned the video: “EP 5 of the ‘don’t queue, make it yourself’ series is BACK, and we’re making smash burgers (but plant-based) using @beyondmeat because it’s veganuary and why the hell not?!? Plus, this whole meal has over 30g of plant protein, so I’d say that’s a win!”

Sophie’s video has already been viewed over 27,100 times, racking up 702 likes and 90 comments. Emma replied: “Okay no I am actually going to need to eat this.”

Angelica said: “So I'm coming to you for dinner.” @prunchme commented: “Queuing up for this outside your house,” while another said: “The perfect burger.”

And @thefemalecycle agreed: “Literally just deciding what to have for dinner and this is all I want…”

So if you want to recreate this healthy version of one of your favourite comfort foods, this is what you’ll need for Sophie’s recipe.

Healthy smash burgers

Ingredients

For the brioche buns

  • ⁠250g flour

  • ⁠25g caster sugar

  • ⁠1/2 tsp salt

  • ⁠6g instant yeast

  • ⁠50g vegan butter, cubed

  • ⁠150 ml soy/oat milk

For the glaze

  • ⁠2 tsp maple syrup

  • ⁠3 tbsp plant milk

  • Sesame seeds

For the burger sauce

  • 2 tbsp mayo

  • 2 tbsp ketchup

  • 1 tbsp mustard

  • Handful of pickles, finely chopped

  • 2 tsp garlic powder

  • 2 tsp paprika

  • 1 tsp onion powder

  • Salt & pepper

To assemble the burger

  • ⁠2 x Beyond Smash patties

  • ⁠Fried onions

  • ⁠Tomatoes

  • ⁠Lettuce

  • ⁠Pickles

  • ⁠Vegan cheese slices

Method

Mix flour, sugar, salt, instant yeast, and plant milk in a bowl. Knead until smooth.

Gradually add the cubed vegan butter in cubes, kneading until the dough is smooth. Prove for two hours then shape into buns and prove for another 30 minutes.

Glaze and sprinkle with sesame seeds. Bake at 200°C for 15 minutes, then cover with foil and bake eight to ten minutes more.

For the burgers, heat some oil in a pan and add the Beyond Smash patties. Smash them flat with the back of a spatula (you can fry the onions at the same time).

Cook the patties on each side until golden brown then add vegan cheese. Add a splash of water to the pan and cover with a lid to melt the cheese.

Toast the buns. Assemble the burger and tuck in.
