This is delicious with my recipe for griddled chicken thighs topped with smoky chilli butter.

Prep time: 10 minutes

INGREDIENTS

  • ½ savoy cabbage

  • ½ small red cabbage

  • 1 red onion

  • 2 small red peppers, halved, deseeded and very finely sliced

  • 2 red chillis, halved, deseeded and cut into fine slivers

  • 3 tbsp Dijon mustard

  • 50ml cider vinegar

  • 3½ tbsp caster sugar

  • 100ml olive oil

  • Generous shake of Tabasco

METHOD

  1. Remove the core from both cabbages and shred finely. Slice the onion wafer-thin (use a mandolin if you have it). Prepare the peppers and chillis. Put the mustard in the bottom of a large bowl and stir in the cider vinegar and sugar, whisking as you do so. Add the oil, Tabasco and some seasoning.

  2. Toss in the vegetables and mix well. Taste for seasoning – you may want more Tabasco.
