Inside new restaurant in desirable suburb of Birmingham as boss says 'we are so proud'

One of Birmingham’s newest restaurants has opened in the trendy area of Stirchley, offering customers the opportunity to try authentic Nepalese and Indian food. Everest Indigo opened last week on the Pershore Road, replacing Chaman Indian Restaurant.

Customers can still order Indian-style curries, including favourites not on the menu. For Nepalese cuisine, dishes include momo, a steamed dumpling with a choice of filling.

Originally from Nepal, Everest Indigo owner Raj Khanal has been a chef for over 20 years, working in kitchens across Birmingham, London and Amsterdam. Speaking to BirminghamLive, Raj spoke about the concept behind one of the city’s newest restaurants.

He said: “We wanted to introduce Nepalese food in Britain and we are proud. We have affection with British people and they have affection with us. Our past history is that the Gurkhas serve in the British Army. We have an intimate relationship.

"British people know about Nepal, the culture is similar to India and so is the food such as our samosas. Our samosa, for example, you will never have this taste anywhere else.

“I wanted to introduce more British people to Nepalese food. Indian food is more spicy and it’s not the best for health. If people want Indian style, I can still make it that way too.

“Other places use artificial spices, we bring raw spices into our kitchen and make them on-site. Our principle is good food but with a healthy twist.”
