Jamie Oliver's 'exciting' salmon in a bag recipe is ready in 15 minutes

Jamie Oliver, the renowned chef, has shared his "exciting" ingredient combination for cooking salmon in a foil parcel, which he says results in beautifully steamed fish. This method was first revealed in his recipe book, ONE by Jamie Oliver, where he explained how to make the most delicious salmon.

He said: "Salmon is one of the most common fish that we buy, so I wanted to share one of my favourite cooking methods for it. By creating a foil parcel, you not only beautifully steam the fish, but also impart wonderful flavour from exciting ingredient combos."

Moreover, this method allows for a "satisfying meal in just 15 minutes of oven time", which is ideal when you're having a busy day, reports the Express.

Salmon in a bag

Ingredients

  • 230g jar of roasted red peppers

  • 15g smoked almonds

  • 400g tin of chickpeas

  • 15g flat-leaf parsley

  • 30g chorizo

  • Two x 150g salmon fillets, skin on, scaled, pin-boned

  • Olive oil

Method

Preheat the oven to 220C (425F/gas seven). Place a large sheet of thick tin foil in a roasting tray, leaving half overhanging.

Drain the peppers and place in a blender with the almonds, most of the chickpeas and its juice, and the parsley stalks (reserving the leaves), then blitz until smooth. Season then spoon into the centre of the foil in the tray.

Finely slice the chorizo. Then slice two 1cm-deep cuts into the skin side of the salmon, then stuff in the remaining herb leaves.

Scatter the chorizo and the remaining chickpeas over the sauce, then sit the salmon on top.

Season with sea salt and black pepper, and drizzle with a little olive oil. Fold in the foil overhang, and twist the edges to seal.

Bake at the bottom of the oven for 15 minutes, or until the salmon is beautifully cooked through. The salmon is ideally accompanied by an additional serving of steamed or roasted seasonal vegetables on the side.
