Joe Wicks' 'quick and easy' pancake recipe perfect for baby weaning

Fitness and nutrition expert Joe Wicks has shared his 'quick and easy' pancake recipe that's perfect for weaning little ones. The social media star has an Instagram account dedicated to baby-friendly recipes that parents can try when they are starting to introduce their babies to food for the first time.

Inspired by Joe's quick and healthy 'Lean in 15' series, the meals and accompanying recipe book, are called 'Wean in 15' ideas for parents to try. One of the breakfast recipes featured in the book is Joe's banana pancake recipe, which he said is ideal for a speedy and simple meal.

Taking to social media, he said: "Such a nice healthy treat for breakfast and there’s normally a couple left for a snack later." Here's the recipe in full to try this weekend with your little ones.

Ingredients:

  • 1 banana, peeled and sliced

  • 2 eggs

  • 40g porridge oats

  • 30g desiccated coconut, plus extra to serve if you wish

  • ½ tsp baking powder

  • ½ tbsp coconut oil or butter

  • 40g blueberries, large ones cut into quarters, smaller ones cut into halves

Method:

  1. Blend together the banana, eggs, oats, desiccated coconut and baking powder until perfectly smooth.

  2. Melt the coconut oil or butter in a non-stick frying pan over a medium heat. To cook the pancakes add tablespoonfuls of the batter to the pan and dot the top of each pancake with a few of the chopped blueberries. Cook for 1-2 minutes before flipping to cook the reverse side. Repeat until all the batter is used.

  3. Leave the pancakes to cool a little after cooking to prevent the blueberries from burning your baby's mouth. Sprinkle with desiccated coconut to serve, if you like. The pancakes keep for up to 2 days covered in the fridge.

The fitness coach became a household name during the coronavirus pandemic, thanks to his easy-to-follow exercise videos. Joe, 39, is a keen fitness fanatic and says exercise can help us look after our bodies, both physically and mentally. Joe, who was given an MBE for his services to fitness and charity, frequently shares easy workouts and recipes for people to try at home, and many of his resources are free and accessible to everyone.

Joe, also known as The Body Coach, recently joined the Dragons' Den panel as a guest judge. A Scouse dad was in tears as he pitched his ‘brilliant’ product on the BBC show last night. Joseph Keegan, started his business, Body XCore,a few months ago.

The business offers a ‘gym in a bag’ which contains fitness equipment that can be worn and easily carried around wherever you are. In the latest episode of Dragons Den, which was broadcast last night, he asked for £70,000 of investment in return for a 10% stake in the business.

Joseph, who is a fitness fanatic, was frustrated that there was no easy way to carry gym equipment on the go for his outdoor workouts. However, Joseph told the dragons there was an emotional backstory behind the idea. He said: “This product came to me through a dream. My mum handed me this product in my dream when I was down. I was really down. I was going through a tough time in my life. I lost both parents, I lost my very good friends and I really found myself through my training. But in all honesty, I didn't really want to be here any more. I was that low… I was thinking of ending my life.”

Joe offered the full £70,000 for 25% in Body XCore, but faced rival offers from fellow dragons Peter Jones, Sara Davies and Touker Suleyman. Eventually, Joseph agreed to take three of the Dragons up on their offers, walking away with £35,000 each from Joe, Peter and Touker, in exchange for 37.5% of his business.
