I made the trending 'cottage cheese flatbread' with just two ingredients
If you've spent any time on TikTok recently, you've likely seen food enthusiasts whipping up creative recipes with an unexpected star ingredient - cottage cheese.
Once thought of primarily as a jacket potato topping, the lumpy cheese is now living its best life thanks to its high protein content and mild flavour, showing up in no-bake cheesecakes, protein pancakes, dips, doughs, and more. Popping up in many more recipes than I ever could have imagined, one in particular caught my eye.
Curious about a viral two-ingredient recipe using, of course, cottage cheese, I decided to try making the popular flatbread that's become a bread alternative among health-conscious users on social media.

I'll preface this by saying that I am not a natural in the kitchen. I make hearty meals to feed the family, whip up lunch boxes on demand and ensure that the cupboards are always full enough for snacking kids - other than that, I'm not a massive fan.
So with just two ingredients, I thought even I could master this particular recipe. Following a TikTik video from an account called @healthylittlepeach, I grabbed my cottage cheese, eggs and assorted condiments and set about it.
Measuring from the heart, as they say, I plopped half a tub of cottage cheese and two eggs into my trusty blender. Adding some garlic powder, onion salt and mixed herbs I blitzed until smooth and runny.
Having placed a sheet of baking paper on my baking tray I poured the mixture over a little oil and popped it into a pre-heated oven for about 25 minutes.
Slightly disappointed that my finished product didn't look as flat or as perfect as the TikTok video, I was still just about able to pop some salad inside and roll it into a wrap of sorts. Tucking in for lunch, I was surprised that it was pretty tasty - winner!
Here's the recipe I used:
200g Low Fat Cottage Cheese
2 medium eggs
Onion salt to taste
A pinch of garlic powder
A heftier sprinkle of dried herbs
Conclusion:
I loved the flavour, the texture was good and the increased protein and lower calories were a bonus. But, one thing I would say is that it only made enough for one medium-sized wrap and I did have to wait for it to cook and cool down before I could eat it.
Would I make it again? Definitely. But, if I was looking for something quick and easy, I'm afraid a shop-brought wrap or slice of regular bread would be more tempting.
