Mary Berry's three-step lemon cake recipe has a lovely blend of 'citrus and sweet'

Mary Berry's "perfect" lemon cake recipe, with its three easy steps, has been winning over baking enthusiasts.

The recipe went viral on TikTok after The Cupcake Clinic showed how to whip up Mary's delicious dessert. It's been hailed as a "no-mess" method since all it involves is throwing all the ingredients into a bowl on your kitchen scales and giving them a good mix.

Next, simply pour the batter into a loaf tin and bake for 40 minutes. The final flourish? Crafting the perfect drizzle. While the cake is still hot from the oven, mix sugar and lemon juice, then pour it evenly over the cake.

  • 75g caster sugar

  • 175g self-raising flour

  • 175g butter, softened

  • Three eggs

  • Zest of one lemon

  • 3/4 tsp baking powder

For the topping:

  • 100g granulated sugar

  • Juice from one lemon

To whip up the cake, simply mix all the cake ingredients together, and bake in a preheated oven at 180C for 40 minutes.

For the finishing touch, combine the drizzle ingredients while the cake is still hot, and spread it generously on top.
