Mum's Christmas roast potato recipe that you can prep and freeze now in advance

There’s a lot of debate over Christmas potatoes. Some like cooked with goose fat, others prefer oil, and some…just want them done fast.

If you’re looking for any hacks ahead of Christmas, this mum's hack could help streamline time spent in the kitchen on December 25th. The recipe calls for just four easy steps to make ‘delicious’ and ‘crispy’ potatoes.

Ciara Atwell, food blogger and mum of two, shares her recipes online. Her blog, called ‘My Fussy Easter’, was inspired by her desire to get her picky eater daughter to eat a better and more varied diet.

The mum has now amassed 500 different recipes on her site. These range from healthy breakfasts to Christmas day hacks.

In a TikTok video, Ciara said: “Prepping Christmas dinner can be a lot and one of the easiest ways I found to cut down the amount of time I spend in the kitchen that morning is by par cooking and freezing my roast potatoes ahead of time.”

The recipe

Ciara says that cooking the potatoes ahead of time can save time while still making for ‘delicious’ and ‘crispy’ potatoes. You’ll need to peel all the potatoes you want to use and chop them in half.

The next step is to par boil them, or to only partially cook the potatoes. It is generally recommended to do this for around 15-20 minutes.

You can then freeze them on a tray, before popping them in a bag to save space in your freezer. On the day you can just take your potatoes out and cook them as normal on a tray with oil.
