Nutritionist's pumpkin soup recipe is 'so easy' and will boost your health too
Considering that it's National Pumpkin Day today (October 26), what better way to celebrate that a delicious and healthy pumpkin soup?!
Lucky enough for us, nutritionist and online cooking sensation Luba Pavia has shared an easy recipe that has been described as creating the 'best ever' version of the soup.
Luba, from Australia, regularly shares her plant-based recipes with her 943,000 followers on Instagram. And they were certainly loving her pumpkin soup creation, with the post racking up more than 13,900 likes.
The reel started off with Luba getting her work surface ready and then chopping up her pumpkin. After this, she placed it onto some parchment paper onto a baking tray and began to chop up some sweet potato – which she put on the same baking tray.
Next to be diced was a red onion and some garlic, which were again added to the tray along with some cherry tomatoes. This was all generously drizzled with avocado oil before she sprinkled some Italian seasoning on top.

This was then placed in the oven to cook for 30-40 minutes – or "until the vegetables are tender and the garlic is soft", according to Luba.
She then adds: "Remove from the oven and let the garlic cool down. You can speed up the cooling process by placing garlic into a bowl with ice for 5 minutes."
After that is all cooked, Luba is seen adding the vegetables into a blender and squeezing out the garlic. She adds in soy milk and half a cup of cashews too before mixing the ingredients. Luba tells fans: "Puree the mixture into a creamy texture, adding more milk or water if the soup is too thick."
When this is done, she says you can "serve and enjoy right away or store it in a container to enjoy later in the week".
Following up in the caption, Luba wrote: "NO CREAM CREAMY PUMPKIN SOUP. Heads up, this is the best pumpkin soup I’ve ever made! It’s super creamy and effortless, making it perfect for lunch meal preps for the week ahead."

Fans were loving the recipe, as one admitted it looked "very tasty", while another added: "How yummy and healthy." A third continued the praise telling her: "I love your recipes!"
As well as being incredible tasty, there's also a number of health benefits to eating pumpkins, according to Healthline. As well as being rich in vitamins, minerals and antioxidants, pumpkins' low calorie content also makes it a weight loss-friendly food.
The website further adds: "[Pumpkins] nutrients and antioxidants may boost your immune system, protect your eyesight, lower your risk of certain cancers and promote heart and skin health."
