Recipe of the week: Fruity Lollies

Fruity lollies

Fun and easy to make, these colourful lollies are the perfect way to finish off a BBQ.

Ingredients:
• 450ml Coconut Water
• 15ml Elderbrook Yuzu, Spanish Lemon & Lucuma cordial
• 8-10 Fresh Strawberries (depending on size), de-hulled & sliced
• 2 Passion fruits
• 1 Kiwi, peeled & sliced
• 8 freeze at home lolly moulds

The fresh fruit in these lollies make them a real crowd pleaser and a perfect way to finish of a BBQ. They’re fun, easy to make and will be enjoyed by the whole family.

Dilute the Elderbrook Yuzu, Spanish Lemon & Lucuma cordial into the coconut water in a large jug. Place the kiwi slices into the lolly moulds, you’ll find they nicely stick to the sides of the mould so easily visible once frozen. Drop in the strawberry slices and carefully pour in the coconut water mix to roughly 1 cm from the top edge of the moulds.

Half the passion fruit and scoop out the centres with a teaspoon and add to the lollies. Gently stir and push the fruit throughout the moulds careful not to move the kiwi fruit. Freeze until solid throughout, ideally overnight.
