The secret to making the perfect cheese toastie REVEALED

Everyone knows that sweet dreams are made of cheese – so when it comes to the ultimate comfort food (for when you just can't be arsed) the iconic cheese toastie wins every time.

And according to experts, you may have been making grilled cheese sandwiches wrong your entire life.

Whether you opt for the classic choice of white bread, butter and cheese, or mix up the masterpiece by adding the likes of ham, mushrooms, tomatoes and olives, you've been missing one key ingredient – mayonnaise.

Yep, bad news for mayo haters – turns out, slathering your bread in mayonnaise instead of butter before toasting it actually makes the cheese toastie crisper and as a result, more delicious.

Food writer Tristan Lutz is calling for people to make the switch from butter to egg mayonnaise, which he says will make the bread brown more evenly, burn less quickly and avoid tearing a hole in the bread while trying to spread it.

"While butter splits into oil and solids, the latter of which burns quickly against the hotplate," he says. "Mayonnaise is perfectly emulsified, meaning no more blackened patches.

"And whole egg mayonnaise – the kind you buy in a jar – has the same ratio of salt, so you won't be sacrificing any flavour."
