Simple shortbread recipe with just three ingredients that's perfect for baking at home

Shortbread is a traditional Scottish treat that's been enjoyed since the days of Mary Queen of Scots - with the famous monarch even credited with its invention.

The sweet, crumbly delicacy is a festive favourite and is often enjoyed on Hogmanay. But there is no reason it can't be savoured in the summer as well.

And to help with this, the culinary experts at Taste at Home have released a recipe that needs only three ingredients, takes just over half an hour, and gives you four dozen shortbread fingers. Submitted by Ms Rose Mabee from the aptly-named Selkirk in Manitoba, Canada - it is perfect for home cooking.


- 500ml (2 cups) of softened butter

- 250ml (1 cup) of packed brown sugar

- 500 to 600 grams (4 to 4.5 cups) of all-purpose flour

- Start by preheating your oven to around 180 degrees

- Combine the butter and brown sugar until the mixture is light and fluffy

- Add 450g (3.75 cups) of the flour and mix thoroughly

- Turn the dough onto a floured surface and knead for five minutes, gradually adding the remaining flour until it forms a soft dough

- Roll the dough to a thickness of 1/2 inch, then cut into strips - 3 inch x 1 inch works well - and place them 1 inch apart on non-greased baking sheets

- Feel free to experiment with shapes here, as long as you maintain the thickness you could create circles or triangles.

- Prick the dough with a fork then bake until the biscuits are lightly browned (around 20-25 minutes)

- Allow the shortbread to cool (preferably away from curious hands or hungry mouths), then serve with coffee or tea and enjoy
