Slimming World enthusiasts have been singing the praises of a coconut baked oats recipe that "tastes like cake". This delectable dish offers the indulgence of sweet goodness while maintaining remarkable health benefits.

Concocted by Instagram food foodie Cakeontherun, it has been described as delivering the joy of cake, yet it stands out for being a healthy alternative that can be easily put together in a microwave or an air fryer.

With its low-calorie and low-fat attributes, the recipe is hitting all the right notes with those adhering to the Slimming World eating plan. In this plan, 40g of plain porridge oats qualifies as a Healthy Extra 'b' choice.

Coconut baked oats recipe (serves 1)

Ingredients

  • 4 tbsp (around 40g) porridge oats (blended or not blended)

  • 1 tbsp desiccated coconut

  • 3 tbsp low-fat coconut yoghurt (soya is a good option)

  • 1 tsp sweetener or low-calorie syrup

  • 1/3 tsp baking powder

  • Squeeze lemon juice

Method

  1. Put everything into a cup and mix until foamy making sure all the oats are combined from the bottom of the mug. If you've got a blender, blitz oats to a powder for a few seconds as it makes the texture more cake-y. Clean the rim of the mug with your finger.

  2. Microwave on high for 90 seconds or transfer into a lined oven-proof dish and cook in the oven for 15 minutes at 180C/ 350F/gas mark 4.

  3. Give the mug a shake, then tip it out onto a plate. Serve with extra yoghurt.
