This Slimming World friendly breakfast tastes just like carrot cake. It can also be made in just 90 seconds to cook in the microwave, making it a perfect breakfast or treat.
The tasty recipe includes juicy sultanas, sprinkled with crunchy walnuts and topped with luscious cream cheese frosting, making it a treat to eat. The recipe can satisfy a sweet tooth but with low calories thanks to its ingredients, reports SurreyLive.
Instagram foodie @cakeontherun created the recipe and is known for her low fat and low calorie bakes. The dish is perfect for those following the Slimming World or Weight Watchers plan. Her carrot cake baked oats are made in a mug and takes just 90 seconds to cook in the microwave.

The recipe can also be baked in the oven for 15 minutes if preferred. It looks and tastes just like cake, but it doesn't contain flour, butter or eggs. People shared their praise on Instagram, with one person who said: "The mug cake recipe I've been looking for, I'll try it tonight."
Carrot cake baked oats recipe (serves 1)
Ingredients
5 tbsp (40g) porridge oats (blended if possible)
2-3 tbsp any plain or vanilla yoghurt + 1 tbsp extra to serve
1 tbsp grated carrot
1 tsp sweetener, sugar or syrup
Sprinkle sultanas
Sprinkle chopped walnuts
1/2 tsp cinnamon
1/3 tsp baking powder
Squeeze lemon juice
Method
Put everything into a small mug and mix well making sure all the oats are combined from the bottom of the mug. If you've got a blender, blitz oats to a powder for a few seconds as it makes the texture more cake-y.
Microwave on high for 90 seconds (or transfer into an oven-proof dish and cook in the oven for 15 minutes on 180C/ 350F/gas mark 4).
Tip the cake out onto a plate, top with extra yoghurt and enjoy straight away.
Top tips for the best baked oats
Blitz your oats in a blender so they become a flour first.
Make sure you stir all of the mixture from the bottom of the mug so that everything is combined.
If you're using a microwave, run your finger around the top of the mug to wipe it clean so it cooks evenly.
If you're using the oven, line your dish with baking parchment so it does not stick.
The recipe also works with low fat and vegan yoghurt such as soya and coconut.
Similarly, it works with gluten free oats.
It is best eaten straight away while it is still warm.
