Cape Town – From perfectly crisp pastries to soggy bottoms, Pie and Tarts Week kicked off the third episode of The Great South African Bake Off.
There were bold flavours, nutty flavours and a mix of apples on the menu and in the end Desmond Solomon won Star Baker and Bryan Bergsteedt left the tent.
Chatting to Channel24 about his bold ingredient in the Showstopper challenge, Bryan revealed he chose Buchu – a protected plant that is part of the Cape Floral Kingdom and used for medicinal purposes – because firstly he absolutely loves it and because it was something different.
“I love the flavour, I mean I drink it almost every night and it is so good for you. And there are so many standard flavours out there so I just thought, ‘why not give it a go.’”
This has not been his most bold ingredient in his bakes however, as Bryan credits his basil yoghurt foam recipe used in his Showstopper bake as the weirdest combination.
“I’d have to say that basil yoghurt that I used in my apple and blueberry pie was probably the weirdest. It just didn’t work too well but I’ll keep trying different things.”
From dropping his crackers in Biscuit Week to dropping his pie in Tuesday night’s episode, Bryan admits he does have butterfingers and even revealed the most important or expensive thing he has dropped is a TV, but also alludes to nerves felt in the tent to his accidents.
“One thing I have to say, in the tent the nerves are there constantly but other than that I will admit that I am generally a bit of a butterfingers. There was once a nice big TV that I might’ve dropped, but you live and you learn.”
And while Bryan was part of the show for Cake, Biscuit and Pie and Tarts Week, he sure hoped to be in the tent for Bread Week.
“I was honestly looking forward to Bread Week because I make an amazing bread and so it was going to be amazing but at least I still get to bake for the people I love, without all the pressure, so I’m still happy.”
