UK’s first Dutch Stroopwafel bakery opens at Glasgow's Dockyard Social

The UK’s first Dutch Stroopwafel bakery has opened in Glasgow.

Wholly Waffles is now serving up the delicious freshly baked waffles which come sliced in half with gooey caramel in the middle.

Timothy Schelhaas, who launched the new desert bar at The Dockyard Social over the weekend, is hoping the classic Dutch treat will be a hit with locals. He said: "I’m so excited we’ve been able to bring fresh Stroopwafels, a true Dutch staple, to Glasgow.

“Anyone who has ever visited Amsterdam knows there is nothing quite like a fresh Stroopwafel. Our waffles couldn’t be more different from store-bought ones.

“We make all our waffles fresh to order, using a traditional Dutch recipe. The caramel is warm and gently spiced with cinnamon.

“The first Dutch waffles were baked in the early 19th century, so you could certainly call it the Netherlands’ first street food.

“Glasgow has an incredible and diverse street food scene, so I’m confident we’ll blend in well.”

Timothy came up with the idea of selling Stroopwafel in Scotland after moving from the Netherlands to Edinburgh in 2022, and discovering no bakeries selling his favourite treat.

He decided to take it upon himself to change that, training in Gouda, the Dutch city where Stroopwafels were invented to perfect his technique

When he returned to Scotland, he imported the equipment needed and adapted the recipe to British produce. Following his return, he started trading at events and festivals
