Does anything beat a warm muffin studded with fresh blueberries? Whether for breakfast, brunch or a teatime treat, this simple recipe will have you reaching for another in no time.

INGREDIENTS

  • 300g blueberries

  • 200g plain flour

  • 2 tsp baking powder

  • 125g caster sugar

  • 175ml milk

  • 2 eggs

  • 150ml vegetable oil

METHOD

  1. Heat the oven to 180C/gas mark 4.

  2. Place 12 muffin cases in the muffin tin. Cut the berries in half.

  3. Sift the flour and baking powder into the sugar.

  4. In a separate bowl, whisk the milk, eggs and oil together until smooth.

  5. Make a well in the centre of the flour mixture, and quickly, lightly, beat in the liquid mixture. Fold in the blueberries and spoon the batter into the muffin moulds.

  6. Bake for 25 minutes or until risen and golden, and cool on a wire rack.

  7. Serve while still warm, or eat the same day.
