Vegan hard-boiled eggs are now a thing

Egg mayonnaise sandwiches, dippy egg with soldiers and scotch eggs could soon be back on the menu for vegans thanks to some clever students in Italy.

Four students at the University of Udine have developed a product that looks and tastes like a hard-boiled hen’s egg, using entirely plant-based ingredients.

The vegan “egg” is made from high-protein legume plants (like beans, pulses and peas), vegetable oils, a gelling agent and vegan salt, Food Navigator has reported.

The egg’s creators, who all study food science and technology, spent a year-and-a-half developing the vegan product.

Not only is it vegan and full of protein, but it’s probably better for you than a real hen’s eggs, which are high in cholesterol. The vegan egg is cholesterol-free.

And even though it’s made from plants, it doesn’t contain any gluten, so coeliacs won’t miss out.

The university is in talks with companies who might want to acquire the product, so it could be hitting the shelves sometime soon. Exciting times.
