Chef's secret to mashed potatoes uses 'game-changing' method for 'smooth' texture

Renowned Chef Thom Bateman, known for his cooking tips and tricks on TikTok, describes these glorious spuds as a "wonderfully British" essential.

The chef showed his followers a five-step method for crafting "luxurious" and "smooth" mashed potatoes. The result? Fluffy, buttery goodness thanks to heavy cream, butter, garlic, and herbs, transforming your average tatties into something truly remarkable.

For this particular recipe, Thomas recommends using British Maris Piper potatoes, renowned for their fluffy texture and versatility in the kitchen, the Express.

In a revelation that has been dubbed "game-changing" by viewers, Thomas boils the potatoes in a vegetable stock rather than just water, which offers a more robust flavour. As one exuberant commenter exclaimed: "Cooking your potatoes in stock is genuinely game-changing."

Next, comes the mixing of smooth, creamy goodness. Bateman flavours a delightful blend of butter and cream with garlic and herbs, which he then blends with the potatoes for a velvety-soft consistency.

Ingredients

  • 1kg of Maris piper potatoes

  • Vegetable stock

  • 100g butter

  • Two sprigs of thyme

  • Four garlic cloves

  • Two sprigs rosemary

  • 100ml of double cream or heavy cream

  • 100ml of whole milk

  • Salt and pepper

Method

Step one: Peel the potatoes and boil them in vegetable stock until tender.

Step two: Thom explained: "Then we are going to infuse the butter, milk and cream with garlic and herbs over low heat."

Step three: Once your potatoes are fork-tender, you can begin to mash them. Thom added: While the potatoes are still hot pass them through a ricer and even through a sieve if you want them even smoother."

Step four: Once your potatoes have reached the desired consistency, it's time to make them extra creamy. Thom said: "Pour in your buttercream mix until you get a lovely, luxurious, smooth and delicious mashed potato."

Step five: Season with salt and pepper to taste, and then serve.
