Make Mary Berry's simple one-pot creamy salmon recipe for quick 20-minute dinner

Mary Berry's one-pot salmon dish is "so easy to make, yet impressive" according to the baking legend.

The dish, which the cook says is a "really healthy meal", is perfect for families and comes from her cookbook Simple Comforts.

The recipe can be made in just 20 minutes and those who aren't keen on fennel can use a thinly sliced leek instead, while the salmon can be replaced with pink trout, reports the Express.

Ingredients

To make the dish you will need:

  • a large knob of butter

  • three large banana shallots (sliced)

  • one fennel bulb (core removed and thinly sliced)

  • 150ml of white wine

  • 200ml of full-fat creme fraiche

  • four 125g thin, centre-cut salmon fillets (skinned, each cut in half lengthways to make eight thin strips)

  • 100g of frozen petit pois (defrosted)

  • a squeeze of fresh lemon juice

  • two tablespoons of chopped parsley

  • salt and freshly ground black pepper.

Method

To make the dish, start by melting the butter in a large, wide-based pan over a gentle heat.

Add the shallots and fennel and fry over a high heat for two to three minutes.

Lower the heat, cover the pan with a lid and continue to cook for eight to 10 minutes until tender.

Pour in the wine and boil to reduce by half, then stir in the creme fraiche and bring to the boil.

Season with salt and pepper, then place the salmon strips in a single layer in the sauce.

Cover the pan and allow it to simmer gently for approximately four minutes until the salmon is almost cooked.

Next, add the peas, submerge them in the sauce, and continue cooking for about three minutes.

Conclude by mixing in the lemon juice, adjusting the seasoning as needed, and garnishing with parsley.

Serve this creamy salmon dish with its accompanying sauce and a side of rice, mashed potato, grains or crusty bread.
