Mum shares simple one-pan chicken dinner recipe that is 'doable in 30 minutes'

A mum has shared a simple 30-minute recipe that requires just one pan to cook the entire meal.

It's not always simple finding midweek recipes that won't take hours to cook, especially when you've got a family to feed. This chicken recipe might be the answer to your prayers, while saving on the washing up.

The best part is, it takes just 10 minutes of preparation and cooks for just 20 minutes in the oven to create one melting dish of flavour.

Home cook Ereka Vetrini, who goes by @erekasfood on TikTok, shared the recipe with the caption: "SAVE my 30 minute chicken dinner for the next time you need a quick and easy weeknight meal!"

This recipe involved chicken stuffed with mozzarella cooked in a pan with chilli peppers, tomatoes, pasta and prosciutto ham. This hearty meal can be cooked together in one pan and baked in the oven for 20 minutes.

The video itself garnered 326,000 views with over 11,000 likes and 7,000 people saving the video to watch later.

In the video, Ereka, who is from the US, said: "If you are looking for a 30-minute, juicy, one-pan chicken dinner then keep watching."

The mum then explained how to make the dish in the video alongside clips of her making the tasty dish.

She said: "Okay, start by stuffing a few chicken breasts with mozzarella. Get them into a pan, sear them on both sides until they're golden brown and the stuffed chicken comes out.

"Then add garlic, Calabrian chilli pepper, chicken broth and let that cook for a bit. Add back your chicken, top it with some prosciutto and get it into the oven.

"When it comes out, you add a little bit of pesto and you are done. And we just cooked dinner without chopping a damn thing. That's how I like to roll on the weekdays, and dinner's done."

One-pan chicken dinner recipe

  • Five chicken breasts - seasoned with salt and pepper

  • Half a cup of shredded, low moisture mozzarella

  • One and a half tablespoons of butter

  • Three tablespoons of olive oil

  • Two pints of grape tomatoes

  • Half a teaspoon of salt

  • Quarter of a teaspoon of pepper

  • Two large cloves of garlic - grated or minced

  • One tablespoon of crushed Calabrian chilli pepper

  • Two cups of chicken broth

  • One cup of orzo pasta

  • Three pieces of prosciutto - cut in half

  • Three tablespoons of basil pesto sauce (optional)


  1. Pre-heat the oven to 200C then use a sharp knife to create a pocket in each of the chicken breasts.

  2. Fill the pocket with two tablespoons of mozzarella

  3. Add one and a half tablespoons of butter and two tablespoons of olive oil to a 12-inch pan. Raise the temperature to a medium heat and let the butter begin to foam.

  4. Once it is cooking, add the chicken seam side down. Cook for about 2 minutes on each side or until golden brown.

  5. Remove the chicken and lower the temperature, adding the tomatoes and the remaining tablespoon of olive oil. Cook this for three minutes, then use the back of a spatula to burst the tomatoes.

  6. Add the garlic and chilli pepper, then mix well and cook for two more minutes. Add in the chicken stock and raise the temperature to a medium-high heat.

  7. Once the liquid is boiling, add the orzo pasta and cook for two more minutes, stirring occasionally to make sure the pasta doesn't stick, then turn off the heat.

  8. Add the chicken back into the pan seam side up. Top each piece of chicken with half a piece of prosciutto.

  9. Place the entire pan into the middle rack of the oven and let it cook for 20 minutes or until the chicken has an internal temperature of 75C.

  10. Top the dish with basil and serve.
