Opening date set for huge new Birmingham steak restaurant

Work is 'progressing quickly' to open a huge new steak house in Birmingham city centre. Pasture is opening in the old Barclays Bank in Colmore Row next month.

The city restaurant will be the fifth opening from chef-owner Sam Elliott, 36, whose first venture in Bristol under the same name found major success. The Birmingham branch will use the same in-house butchery and top produce that the brand has become known for following further openings in Cardiff.

Pasture will occupy a substantial 6,500 sq ft site across one floor of the old bank building - the largest of all Pasture restaurants to date. The new eatery will be centred around fire-based cooking, using locally-sourced ingredients.

Meat-lovers have been told to expect the 'biggest glass-fronted dry-aging fridge of any restaurant in the UK', theatrical open-fire cooking and ceiling-high windows with views over the city.

The opening, which will create around 100 local jobs, has now been set for Monday, May 27 and advance bookings are open. Elliott then plans to open his own butchery, deli, cookery school and burger joint, Prime by Pasture, in Bristol later this year.

Sam said: "Work is progressing really quickly now, which is hugely exciting! This is our biggest restaurant to date, and when it’s finished, we'll have seating for up to 40 people in our bar, and a further 180 covers in the main dining room.

"Guests will be surrounded by custom-built wine cabinets, an open kitchen to display our theatrical open-fire cooking, along with the biggest, glass-fronted dry-aging fridge of any restaurant in the UK.

"All of this will be complimented by the huge floor to ceiling windows which run across the front of the building with views over the bustling streets of Birmingham."
