New patisserie bistro opens in Wivenhoe after packed launch weekend

A NEW patisserie bar and bistro has opened its doors to the public in Wivenhoe.

Trinity Patisserie threw open its doors earlier this month and has since seen hundreds of customers make purchases.

Situated opposite St Mary’s Church on Wivenhoe’s High Street, the charming eatery serves lunch, brunch, afternoon tea, and handmade French patisserie and confectionary.

The bistro is the vision of 23-year-old Amy Layer, who completed a patisserie course at the Colchester Institute and ran her business in the Wivenhoe Business Centre before securing her pink bistro.

Amy said: “I would call myself a perfectionist, but you have to be a perfectionist to get patisserie right, especially with things like macarons."

“You need to really care enough,” she added. “It’s a science.”

Amy added: “When I was as young as I can remember, my mum had me in the kitchen with her helping with mixing and baking. It’s always been a huge interest of mine because it’s always been related to my mum.”

Amy has spectacular support from her family.

Her parents helped with the refurbishment since securing the building in January, and her mother is a qualified pastry chef who worked for famous pastry chef Claire Clark.

Amy’s husband is also an expert in front of house management and will be helping to train her new staff.

“I feel incredibly lucky,” Amy said. “I don’t know what I would’ve done without my family. It’s been a lot of work, but we finally got it to where we want.

“A lot of my customers I had over at the business centre came here, so as well as new customers, I’ve got my regulars continuing to support me.”

Amy’s dream is for Trinity Patisserie “to be known as the local tearoom.”

“I’d love for people around Wivenhoe to think of me as the first place to go to for lunch, like a household name in this area,” she said.

“Everything is done with table service, so you can feel a sense of luxury and sit, relax, and be served.”

Trinity Patisserie is open Wednesday to Sunday.
