'Perfectly sweet' olive oil cake with 'subtle lemon taste' has people 'drooling'

If you're in the mood to bake a cake but are getting bored of your usual Victoria sponges and chocolate cakes, this one could be for you.

Taking to TikTok, Lex - also known as @lexnicoleta - shared her olive oil cake recipe which she says is "perfectly sweet". Not only that, the moist and fluffy cake boasts a "subtle lemon taste" - perfect as we approach the warmer months.

In the comments, people seemed to drool over the cake with one saying: "Made this tn [tonight] and it is sooo good" with another saying they are going to make it later.

Talking in her video, Lex said that when baking and it's time to add the flour, she adds it in bit by bit. She also adds her butter mixture in little by little until everything is full combined.

Before you start cooking, it's always good to measure out the ingredients before hand to make the process quicker and easier.

Before putting the mix into a cake pan, Lex already prepared it by adding a baking sheet to the bottom to prevent sticking. The sheet is held in place by butter - you can also stick it down with a splash of oil so that when you put the mixture it, the sheet stay in place.

She also lightly dusts it with flour before pouring in the batter. This helps the cake to form an even golden brown crust on the bottom and sides of your cake.

Ingredients

  • 1 cup sugar

  • 4 eggs

  • 1 3/4 cup flour

  • Zest of 2 lemons

  • 3/4 cup olive oil

  • 7 tbsp olive oil

  • 1 1/2 tsp baking powder

  • 3 tbsp milk

  • Powdered sugar

Method

  1. Preheat oven to 350F or 180C.

  2. Sift flour into a bowl and add baking powder and mix.

  3. Whisk together olive oil, milk and melted butter

  4. Combine eggs, sugar and lemon zest into a bowl.

  5. Beat eggs, sugar and lemon zest with a mixer until creamy.

  6. Alternate adding in the olive oil mixture and the flour mixture until combined.

  7. Butter your cake pan, line bottom with parchment paper and dust with flour.

  8. Pour in batter and bake for 30 mins.

  9. Let cool and dust with powdered sugar - enjoy!
