He hosted an afternoon show alongside Alexandra Phillips titled McCoy & Phillips.
Hours after it was announced Holmes was joining the channel, a spokesperson for GB News announced McCoy was leaving "for personal reasons".
In October, it was revealed McCoy had married Dynasty star Emma Samms.
The 60-year-old former BBC newsreader confirmed his engagement to the 61-year-old General Hospital actor last month, and claimed they were planning a spring wedding for 2022.
Samms – best known for playing Fallon Carrington in 80s hit Dynasty – is McCoy’s third wife.
The newsreader welcomed a son named Max with his first wife in 1993, then in 2007 tied the knot with BBC South West presenter Victoria Graham.
Graham and McCoy went their separate ways in 2019.
Samms has been married three times – to Bansi Nagji from 1991 to 1992, to Tim Dillon from 1994 to 1995 and to John Holloway from 1996 to 2003. She has two children from her relationship with Holloway.
Meanwhile Holmes has said: “I’ve spent my career on broadcasting firsts and start-ups, and GB News is one of the most exciting yet.
“It’s just the kind of shake-up the industry needs.
“I’ve admired GB News from the beginning for its clever mix of punchy debate but delivered with warmth and even some fun.
“To me the greatest honour in journalism is to give a voice and respect to the unheard, and that’s exactly what GB News is all about.”
Holmes is known for hosting This Morning with his wife Ruth Langsford.

The duo fronted the programme on Fridays when Phillip Schofield and Holly Willoughby were off.
However, in January this year Alison Hammond and Dermot O'Leary replaced the pair, meaning the husband and wife team then only hosted the ITV show during key holidays.
