Trendy Edinburgh breakfast bao bun spot announces new eatery in upmarket community

A viral Edinburgh breakfast spot has responded to its popular start to life in the capital by announcing a second store in the city.

Pablo Eggs-Go-Bao, a trendy diner selling bao buns filled with Scottish breakfast favourites, built up a following after launching in the north east in Newcastle and Whitley Bay down south before opening their first Edinburgh location on Inverleith Row.

After less than a year in the capital, the team recently uploaded a short video to Instagram as preparations got underway ahead of the opening of their second Edinburgh spot - in the upmarket community of Morningside.

Pablo Eggs-Go-Bao announced they are set to take over the former Comiston Fry ship shop on Comiston Road with internal and external refurbishment works already underway.

Making the exciting announcement, they said: "It is my EGGSTREEEME pleasure to announce that we are opening in Morningside in the Old Comiston Fry. Opening date TBC. Delivery in Morningside and surrounds available from the 10th of May."

In August 2023, shortly after the team's first Edinburgh venue opened on Inverleith Row, we went along to see what all the fuss was about with a queue already forming when we arrived.

With a compact menu filled with some pretty great options, we opted for the Breakfast Bao (£6) with giant bao bun, hash brown, egg, sausage and lashings of melted cheese, siracha (to give it a kick) and a tangy sauce.

Opening the box, we were quickly reminded why this place has proved so hugely popular in its two original shops in Newcastle and Whitley Bay, as we were greeted with a sight that set our mouths watering.

The huge fluffy bao was packed, with the melted cheese and siracha sauce invitingly smothering our sausage, egg and hash brown – and we were glad the order came with a napkin as eating this epic creation gets messy pretty quickly.
