With their own private chefs and the best produce from across the world, it's not surprising that we can't all eat like celebrities everyday.

But this month, I indulged at a delicious newly-refurbished restaurant with that added celebrity wow-factor. Turtle Bay, on Victoria Street, has a new summer menu which has been curated by a world renowned chef, who has been voted Caribbean Chef of the Year three times.

Not only has Collin Brown racked up awards in his decades in the kitchen but he has also cooked for stars including Beyonce, Vin Diesel and Katy Perry. After serving up a Jerk platter to my table he was kind enough to come talk me through my feast.

Collin told me that famous faces favour his cooking and will often choose him to cook on film sets, world tours and for private events because his food is "soulful." He added that his recipes , which are available now in Turtle Bay, don't include heavily processed ingredients.

Celebrity chef Collin has curated the new Turtle Bay summer menu and frequently visits branches across the country to get hands-on in the kitchen. Despite not being based in Liverpool full-time, he has personally taught the cooking staff everything they know.

Before heading up Turtle Bay Collin owned his own restaurant in 2013, in Canary Wharf, before heading to his hometown in Port Antoni, Jamaica to run a cookery school. He then joined Caribbean restaurant group Cotton’s as executive head chef and went on to represent the UK on Netflix’s The Final Table.

During his time building a name for himself in the cookery landscape, he also mixed in celebrity circles, providing dishes for businessman David Rockefeller. A spokesperson for Turtle Bay told the ECHO: "Voted Caribbean Chef of the Year three times over, internationally acclaimed Chef Collin Brown is one of the world's most enthusiastic ambassadors of authentic Caribbean cuisine, whose career has spanned Jamaica, the UK, Europe and the Middle East.

"Collin has cooked for A-list celebrities like Beyonce, Vin Diesel and Katy Perry as well as at numerous exclusive celebrity events globally. He joined Turtle Bay, which has over 50 Caribbean-inspired restaurants across the UK, as Executive Chef in the autumn of 2021.

"Collin’s fusion of exotic flavours and textures nod proudly to the generations of folk who have inhabited the Caribbean islands for centuries, with recipes passed down through the generations. From jerk chicken and curried goat to simple steamed sea bass, Collin's recipes are a celebration of tropical flavours both classic and new."
