Sabor set to bring Spanish flair to London's dining scene this January

The former head chef of the much-loved tapas chain Barrafina is opening a brand new restaurant that she promises will "take diners on a journey".

Nieves Barragan Mohacho’s latest project, Sabor, will have a restaurant, bar and upstairs asador (Spanish grill) that will all offer different tastes of Spain.

Regional dishes spanning the nation – from Andalucia to Galicia and the Basque Country to Catalonia – will be served and all will be given the "Nieves touch”.

Barragan, a Michelin-starred chef who helped kick-start London’s tapas obsession a decade ago will open the doors on Heddon Street in January alongside José Eutra – her former general manager from Barrafina.

The pair are hoping that the traditional flavours and decor of their new space will bring in London’s Spanish-obsessed foodies, who were treated to a one-night taster of what the restaurant would offer back in June this year.

Just like Barrafina, Sabor will offer customers an intimate view of the kitchen from counter seats, which are sure to be some of London's most sought-after from January.
