People looking for a healthier version of a kebab have been indulging in a new Slimming World recipe.

The "fakeaway" recipe is proving to be a hit for those wanting to lose weight. In a unique collaboration, Slimming World has joined forces with Diabetes UK to support individuals living with diabetes or at risk of type 2 diabetes in managing their weight effectively.

As part of their three-year partnership, they've been dishing out co-branded recipes, including the Chicken Shawarma with rainbow couscous a healthier twist on the classic chicken kebab.

The recipe, which is a favourite among those who have seen significant weight loss and has been endorsed by a super slimmer who lost an impressive 16 stone. Designed to serve four, the dish features "smoky Middle Eastern-style skewers" made from succulent chicken thighs marinated in a blend of spices, lemon juice, and garlic.

Accompanying the skewers is a colourful wholewheat couscous salad brimming with red cabbage, onion, tomatoes, cucumber, and a splash of red wine vinegar, reports Chronicle Live.

With over five million people in the UK living with diabetes, Diabetes UK is at the forefront of the battle against the disease. They highlight the critical role of weight management in controlling various forms of diabetes and in achieving remission and prevention of type 2 diabetes.

Here are the ingredients and method for making Chicken Shawarma with rainbow couscous:

Ingredients:

  • 8-10 skinless and boneless chicken thighs, visible fat removed

  • 1 tsp ground cinnamon

  • 2 tsp ground cumin

  • 2 tsp sweet smoked paprika

  • 1 tsp ground turmeric

  • Juice of 2 lemons

  • 2 garlic cloves, crushed

  • 200g wholewheat couscous

  • 250g red cabbage, cored and finely chopped

  • 1 red onion, finely chopped

  • 250g tomatoes, diced

  • 1 cucumber, diced

  • 1 tbsp red wine vinegar

  • Sliced pickled jalapeños, to serve

  • 200g fat-free natural Greek-style yogurt, to serve

Method:

  1. Preheat your oven to 200°C/fan 180°C/gas 6. Spread the chicken thighs out on a large plate or chopping board. In a small bowl, mix together half the cinnamon, the cumin, paprika, turmeric, half the lemon juice and the garlic. Spoon the mixture over the chicken and toss to coat.

  2. Open out the chicken thighs, then stack them on top of each other, like you’re making a tall sandwich. Push 4 wooden skewers (which have been soaked in water) or metal skewers all the way down through the stack, evenly spaced apart. Leave to marinate for 15 minutes.

  3. Sit the chicken in a roasting tin and bake for 45 minutes, or until cooked through. In the meantime, mix the couscous with the remaining cinnamon in a large heatproof bowl, then pour over 250ml boiling water, cover with cling film and set aside for 10 minutes. Fluff up the couscous with a fork, then stir through the cabbage, onion, tomatoes, cucumber, remaining lemon juice and the vinegar, and season lightly.

  4. Remove the chicken from the oven and use a knife to slice down between each skewer to create 4 kebabs. Divide the couscous between 4 plates and add a skewer to each. Serve topped with the sliced jalapeños and dollops of the yogurt.
