Try Jamie Oliver's speedy quiche traybake for an easy and nutritious midweek meal

Some weeks are just busier than others, and that's when having a few quick and easy dinner recipes up your sleeve becomes a lifesaver.

Jamie Oliver, the king of simple yet delicious meals, has come through with a "speedy" quiche traybake recipe that's perfect for those hectic midweek evenings. According to his website, this fuss-free and nutritious meal serves up four portions.

The recipe is also quite flexible, allowing for substitutions like using finely sliced and fried regular onions instead of spring onions.

For an extra twist, try spreading cream cheese over the base of the filo pastry before layering in the veggies, topping with grated Cheddar, and baking for 20 minutes, reports the Express.

Quiche Traybake Recipe


- olive oil.

- Six medium free-range eggs.

- One bunch of spring onions.

- 55g mature Cheddar cheese.

- One large courgette.

- 300g broccoli.

- One x 250g pack of ready-rolled filo pastry.


Start by preheating your oven to 180C/350F/gas mark 4. Then, take a large roasting tray (around 25cm by 35cm) and give it a light greasing with a teaspoon of olive oil.

Crack those eggs into a mixing bowl and whisk them together with a fork.

Next, lay out the filo sheets in the tray, changing the direction of each sheet as you go and brushing a bit of beaten egg between layers. Make sure the sheets extend over the base and sides of the tray to contain the filling.

Brush the top layer with some more egg and scrunch up any overhanging pastry around the edges.

Slice the spring onions finely and add them to the bowl. Grate the Cheddar cheese coarsely (keeping a bit for the top) and the courgette, then add them to the bowl.

Break the broccoli into florets, slice them thinly, and add them to the bowl as well. Season with sea salt and black pepper, then mix thoroughly.

Pour the mixture carefully into the prepared pastry case, spreading it evenly. Sprinkle the reserved cheese on top.

Bake on the bottom rack of the oven for 35 minutes, until the pastry is golden and the filling is set.
