Paul A. Young's salted fudge chocolate brownie recipe
In the video above, Master Chocolatier Paul A. Young shares his recipe for a rich and gooey batch of salted fudge chocolate brownies, smothered in a maple butterscotch sauce.

INGREDIENTS
For the brownies
200g unsalted butter
350g light muscovado sugar
100g golden syrup
330g 72% dark chocolate
6 medium free range eggs
100g plain flour
½ tsp freshly ground black pepper
6g smoked sea salt
For the sauce
100g butter
50g light muscovado
50g maple syrup
½ teaspoon smoked sea salt
100ml double cream
100g dark chocolate chopped into small pieces.
METHOD
Pre-heat the oven to 175 degrees Celcius / gas mark 4
In a saucepan, melt the butter, sugar, golden syrup, black pepper and smoked salt and mix until smooth and bubbling.
Remove from the heat, add the chocolate and stir well until fully melted.
Crack six eggs into the chocolate batter. Mix well until fully incorporated.
Add the flour and mix well.
Line the bottom and sides of a 6 inch brownie tin with a layer of baking parchment and pour in all the brownie batter.
Bake for 30 minutes, until the brownie has set but is still moist and wobbly in the centre. It will look slightly under-done, but the residual heat will set the chocolate and make the brownie very moist. Allow to fully cool, then slice into rectangles.
In a medium saucepan melt the butter, sugar, maple syrup and salt together and simmer for five minutes, stirring occasionally.
Remove from the heat and add the double cream - take care and stand back as it can splutter. Whisk in well.
Add the chopped dark chocolate.
Once mixed, transfer to jug and pour the sauce over the brownies.
